If you are a home brewer, I know that you are always looking for “The Place” to get your supplies, as I have been, but I have to admit that about 99% of the time, I have ordered from Austin Homebrew Supply. Why you might ask? First off they are close, and my order gets here within a coule of days, even in the summer, my yeast gets here with an icepack that is still cold!

This is the winter recipe from Mainstreet
Homebrew’s newsletter. They bill it as bigger and bolder than most
west coast porters. It will be interesting to compare it to the west
coast porter I brewed earlier this month.

Midwinter’s Porter
8 lbs Amber Malt Extract
12 oz CaraMunich
4 oz 120l Crystal Malt
14 oz Chocolate Malt
6 oz Melanoidin
6 oz Special Roast
3 oz Carafa Malt
2 oz No. Brewer Hops (1 oz @ 60 min, 1/2 @ 20 min, 1/2 @ 10 min)
1 tsp Irish Moss @ 45 min
1/2 tsp Yeast nutrient @ 5 min
British Ale Yeast (WLP005)
OG 1.065

Do’s

* Do get a kegerator. If you drink beer regularly, then it’s worth it. The beer is cheaper when you buy it by the keg, and it’s more convenient to just take your glass to the tap.
* If your wife or girlfriend objects to the kegerator, then tell her you are doing it to save the environment. After all, re-usable kegs are much more eco-friendly than all that glass for the bottles.
* Do clean your beer lines each time you switch out your keg(s). The beer in those lines is the perfect growth medium for bacteria and yeast that will make your beer taste like crap. Your lines should be cleaned once per month at the least.

Mash-Out. There are only 5 more days until entries are accepted.

Draft beer can be served in the comfort of one’s home with a kegerator (a portmanteau of “keg” and “refrigerator”). Kegerators are converted refrigerators that enable anyone to have one or more kegs of chilled beer on tap. Homebrewed beer as well as commercial kegs of beer can be served with a kegerator, and the quality will be identical to that found in your local tavern or brewpub. Kegerators are relatively easy to build and operate, and can be quite cost effective. Kegerators are also quite “green”, as they eliminate the need for bottled and canned beer. read more

Wyeast 3864 VSS Canadian/Belgian Ale

Produces mild phenols, which increase with increased fermentation temperatures. Low ester profile with a dry, slightly tart finish. Complex and well-balanced, alcohol tolerant.

Alcohol tolerance: approximately 12% ABV

Flocculation: medium

Apparent attenuation: 75-79%

Temperature range: 65-80°F (18-27°C)

Wyeast 3711 VSS French Saison

Produces saison or farmhouse style bières that are highly aromatic with clean, citrus-ester, peppery and spicy notes with no earthiness, and low phenol. This strain enhances the use of spices and aroma hops, and is extremely attenuative, but leaves an unexpected silky and rich mouthfeel in a very dry finished beer.

Alcohol tolerance: 12% ABV

Flocculation: low

Attenuation: 77-83%

Hello people, are any of you home beer brewers? Do you make your own wine? Regardless of what you brew, I am inviting you all to join our club! I need help with this blog, and a couple of beer or brewing related forums as well. I have had to all but remove the forums because of spammers, most of the members have gone due to this spam problem too.

What is the club about? We are the Hophead homebrew fanatics! The on-line club is for everyone, members of any brew club, or people looking for local clubs as well, we are about DIY brewing, wine making etc. If you want more info, just visit our main site and contact me, David.
